Vicki J. Shafer age 76 of Apple Valley MN passed away peacefully on March 29 2026 at her home with family at her side. Vicki was born on August 22 1949 in Harmony MN where she grew up and graduated from Harmony High School. Vicki attended Winona State College and received her bachelor degree in Sociology. There she met her husband Bill and they were married for 53 years. Vicki was active in the church choir ladies circle and school activities while she raised four children. She was also a key leader in the Dakota Doers 4H club for two decades. Vicki worked for Eastview High School as a Lunch Lady for 23 years. She was a Master Gardener for Dakota County for 30 years where she helped many local gardeners and was known in her neighborhood for her beautiful gardens.
